Is Baingan Bharta (Grilled and Mashed eggplant with exotic spices) healthy?

I have enjoyed this Indian recipe many times in the past, but today I saw how unhealthy it actually is.

It is an elaborate and long process. You take a round eggplant and put it on a stove and turn it until the skin is black and starts peeling off. Then, you rip the skin of the eggplant and the oil is mashed with it. Then, you add some onion, exotic spices and tomatoes.

While looking at my parents crushing this eggplant and sautéing it for a long time, I was wondering if there is any nutrition left in this tasty recipe. Based on various sources I checked, it is hard to understand how much of vitamins are lost while cooking. Some suggest that they lose at least 50% of their nutritional value.

Since the eggplant is being sautéing for so long (15-20 min), it loses most of its nutritional value. I am not saying that you should leave this tasty recipe, but you should add some raw vegetables to your plate to make your meal healthier.
