Organic Living Butter Lettuce

In my family's last visit to Costco, we brought home this Organic Living Butter lettuce out of curiosity about the roots. We enjoyed how it came in a bowl shape as it would be easier to eat as a taco shell.

We made filling out of beans, quinoa, onions and green peas (cooked with a little bit of olive oil and Mexican taco spice).

Since this is grown in San Diego, I feel the carbon footprint is less since it is within California.
